How to Rehydrate Your Starter (Step-by-Step)
- Day 1: Mix the full 5g packet with 25g room-temperature filtered water in a clean glass jar. Stir until dissolved. Add 25g of all-purpose or whole wheat flour. Stir well, loosely cover, and leave at room temperature (70–78°F).
- Day 2: Discard half the starter. Feed with 25g flour + 25g water. Stir, cover loosely, and rest.
- Day 3: You should see bubbling activity. Discard half again and feed with 25g flour + 25g water.
- Day 4: If the starter doubles within 4–8 hours of feeding and passes the float test (a small spoonful floats in water), it's ready to bake with.
Warmer kitchens activate faster. If your home is cooler than 70°F, allow an extra day.
Frequently Asked Questions
How long does the dehydrated starter last before I open it?
Stored in a cool, dry place away from direct sunlight, it remains viable for 12 months or more. It's ideal to keep one as a backup even after your main starter is established.
What kind of flour should I use to rehydrate?
Unbleached all-purpose flour works great. Whole wheat flour activates slightly faster due to more wild yeast on the grain. Avoid bleached flour — the chlorine can inhibit fermentation.
Can I use tap water?
Filtered or bottled water is strongly recommended. Chlorinated tap water can slow or stall fermentation. If you only have tap water, leave it out uncovered overnight to let the chlorine off-gas.
What if my starter doesn't bubble by Day 3?
Give it more warmth and time. Try placing the jar on top of your refrigerator, near a warm oven (not on it), or inside your oven with just the light on. A starter that seems sluggish on Day 3 often takes off dramatically on Day 4 or 5.
Will I need to keep feeding my starter forever?
Only if you bake regularly. If you bake once a week or less, store your starter in the fridge and feed it once a week. It will stay healthy indefinitely with proper care. Many bakers maintain starters for years — even decades.
Does this work for recipes other than bread?
Yes. Once active, your starter works in sourdough pancakes, waffles, pizza dough, crackers, muffins, and more. Your discard (the portion you remove before each feeding) is especially useful for these recipes.
