When to Use It During Your Bake

  • During autolyse — cover the flour-water mixture during its 30–60 minute rest before adding starter and salt
  • During bulk fermentation — cover the dough for the full 4–12 hour bulk ferment, including between stretch-and-fold sets
  • During bench rest — cover the pre-shaped dough loosely for its 20–30 minute rest before final shaping
  • During cold proof (optional) — can be used over the banneton basket in the fridge as an alternative to a shower cap or plastic bag

How do I wash it?
Hand wash with soap and water.

Will it fit my banneton basket?
The 22cm diameter fits most standard round mixing bowls (typically 3–5 quart). For covering a banneton basket in the fridge, the cover works best on the open top of the basket if the diameter matches. A standard 9-inch banneton is approximately 23cm — the cover will stretch slightly to accommodate.

Does the cotton outer layer absorb moisture into the dough?
No. The food-safe polyethylene lining faces the dough and creates a non-absorbent barrier. The cotton outer layer is for durability and handling.

Can I use it to cover my starter jar?
The 22cm cover is designed for mixing bowls. For covering a starter jar, a breathable cloth secured with a rubber band or the jar's loose lid works better — your starter needs airflow, not a sealed cover.

Is it airtight?
It creates a moisture-retaining seal but is not fully airtight, which is ideal for sourdough dough. A small amount of gas exchange is fine during fermentation — you just don't want the dough surface to dry out and form a skin.
